Breakfast Bruschetta

Serves 4


2 tbsp light whipped butter or buttery spread
1 French baguette
1/2 tsp garlic powder
1 cup fat-free liquid egg substitute
1 tomato (diced)
1/4 cup fresh basil (chopped)


Preheat the oven 450 degrees.
Start off with melting the butter in the microwave for about 15 seconds.
Next, slice the baguette into half-inch slices and place the slices on the baking sheet.
Brush the melted butter over the baguette slices and sprinkle with garlic powder.
Place the baguette slices into the oven for 8 minutes or until they are crispy.
Scramble the eggs in a nonstick pan for approximately 3 minutes.
Mix in the tomatoes and basil and continue to cook the eggs for another minute.
Distribute the eggs amongst the slices of bread.
If you like, salt and pepper may be sprinkled on for a little bit of flavor.
