Sweet Potato Fries
1 1/2 lb sweet potato
1/4 cup olive oil
1/2 tsp salt
1/2 Italian herb seasoning
Cut the potatoes 1/2 inch wide strips.
Preheat the oven to 425 degrees and line a baking sheet with aluminum foil.
Coat the aluminum foil with cooking spray.
Lay the potato strips in a single layer on the baking sheet and cover with olive oil.
Sprinkle the salt and the seasoning evenly on the potato strips.
Allow the potato strips to bake for 30 minutes and turning them over every 10 minutes.
