Makes 24 cookies.
1 1/2 cup unsalted butter (softened)
2 cup sugar
1 tbsp vanilla
5 cup flour
2 tsp baking powder
1 tsp salt
Mix the butter and sugar, in a large bowl, together until it is fluffy.
Add one egg at a time into the large bowl and beat well.
Add the flour, baking powder and salt and mix.
Cover the dough with plastic wrap and allow it to refrigerate for 1 hour.
Preheat the oven to 400 degrees.
Cover a cookie sheet with parchment paper.
On a floured surface, roll out the dough and cut it into the cookie shapes that you want.
Transfer the dough onto the cookie sheets and bake for 6 to 8 minutes.
