2 flour tortillas
1 tsp olive oil or vegetable oil
1/2 cup shredded monterey jack cheese
1 tbs parsley or cilantro leaves
Place an oven rack in the middle of the oven and preheat the oven to 450 degrees.
Brush one side of each tortilla with the olive oil and place the tortilla oiled side down, onto a cookie sheet.
Sprinkle the monterey jack cheese onto the tortilla and then sprinkle salsa on the cheese and lastly the parsley.
Place the second tortilla on top of the cheese, oiled side up.
Place the quesadilla into the oven and bake for 8 to 10 minutes or until the tortilla is lightly browned.
Remove the quesadilla from the oven and cut it into wedges to serve.
