Baked Chicken Nuggets

Ingredients:

2 boneless, skinless chicken breasts

1 cup breadcrumbs (panko)
1/3 cup grated parmesan

coarse salt

1 tbs vegetable oil
1/2 cup all-purpose flour
3 large lightly beaten eggs
cooking spray


Directions:

Before you start, preheat the oven to 400 degrees.
Bake the panko for 6 to 8 minutes or until it is golden brown.
Pour the panko into a dish and mix in the parmesan, a 1/2 tsp of salt and lightly cover with oil.
Stir the ingredients together. The flour and the eggs should be in their own separate dishes.
Next steps are to cut the chicken into 2 inch pieces and increase the oven to 450 degrees.
Lightly coat a wire rack with cooking spray in a rimmed baking sheet.
Dip the chicken into the flour, the egg and then the panko and place each piece onto the wire rack.
The chicken should take 12 minutes to be cooked thoroughly.
Flip the chicken over at the 6 minute mark and they should be ready to serve.
